Ingredients
  1. 1 ea. pork shoulder (bone-in)
  2. 2 cups BBQ sauce
  3. 2 cups apple cider vinegar
  4. 1 cup blackening spice
  5. 10 cloves garlic
  6. 2 each onions, peeled & quartered
  7. 2 quarts water
Instructions
  1. Rub pork with blackening spice and BBQ sauce
  2. Place in a deep baking pan with the onions, garlic and carrots
  3. Add the water
  4. Cover with foil
  5. Roast in the oven at 300 degrees 7-8 hours until fork tender
  6. Check at approx. 3 hours
  7. Remove from oven and allow to cool while still in the water
  8. Pick and shred the meat off the bone, removing any large pieces of fat
  9. Mix in a little more BBQ sauce and some of the liquid to keep it moist and add additional flavor
